Sharing your Harvest this Season

Growing our own food is an amazing luxury. Even if it's only a basil plant on our kitchen windowsill, no green leaf ever tasted so delicious on our tomatoes, in our sauces, or added to a chic artisanal cocktail. But for many Americans, growing food is just that, a luxury. Concrete jungles can get in the way of seedlings. Working two or three jobs to sustain your family can wear you out. Fresh vegetables are disease fighting, tasty creations of nature, and no matter your personal situation, no one should be denied the taste of a freshly picked red bell pepper or sugary sweet cherry tomato.

Let me share an amazing website with you. Before I do, however, let me say these folks are not the only people in this country doing great work. We all know friends, relatives, or people unknown to us personally, who are making a difference in our Nation everyday. AmpleHarvest.org makes it their mission to allow gardeners to share their bounty with local food pantries. As their mission states, "AmpleHarvest.org envisions an America where millions of gardeners eliminate malnutrition and hunger in their own communities using only their backyard gardens."

Everyone of us holds the power to help feed our neighbors in need. This May, plant one extra tomato plant - a prolific grower - and dedicate all it's fruit to a local food pantry. How easy is that?! To me, America is helping those in need; giving children access to foods that will help them grow and focus in school. I hope you'll join me this summer, your FOLK MANfarmer, to help someone you may never know, put down the potato chips, and pick up an apple. We may not be solving world peace, but, perhaps, we may just be helping the next generation do it.

Forget Western Kentucky...Come to Burkesville for real BBQ: Another peek into Issue IV!

Our unseasonably warm winter in south central Kentucky has made me long for gardens, grills, and late-night-front-porch sitting. Just because it is warmer than expected, however, does not mean I want to lug out a giant bag of charcoal in 45 degree weather.

Chef Albert Schmid, author of The Kentucky Bourbon Cookbook, was in Burkesville a little over a year ago and stopped in Hamilton's just prior to his talk at the library. When I told him I was doing an article for FOLK, he offered, "I feel very lucky to have found Hamilton's BBQ. My two sons and I ate every morsel on our plate. It has been over a year since I had the pleasure of eating Hamilton's BBQ, but there is not a month that goes by that one of the three of us does not bring up Hamilton's and how the food is soooooo good!"

Backyard Chickens are your destiny!

It’s time to address that new sweeping sensation, taking over small town council debates and newspaper editorials across the nation – backyard chickens. I’ve owned chickens for three years now, a year of which was under strict silence, hiding under a veil of high fences and mottled crows.

Like so many amateur chicken farmers, I ordered a flock of five. Three turned out to be roosters. After giving two of them to a man named “Ming” in a Toys ‘R Us parking lot, who laughed at me when I gave him food to continue feeding them, the last went to a free-range farm. So sweet, if I had then what I had now, he would still be with us. The neighbors didn’t seem to mind the crowing, but one angry neighbor could have given up the location of all those in the coop.

My two original hens remain with me today, joined by some new friends. My flock consists of Silkies – fluffy chickens with a loving disposition whom are horrible layers. This year, coming in June, I’ve ordered all blue chickens. I’ve branched outside my Silkie origins and have order some polish and cochins. If these are foreign words, get thee to a Wikipedia immediately.

Before ordering your backyard chickens, here are some things to consider…

Research your local regulations. Some places are fine with your family harvesting eggs in a cruelty-free environment and in a sustainable manner. Others, however, aren’t. Don’t be like me and house your chickens illegally. You live in fear, for reals!
Figure out where you’re going to keep your chickens. A small cage isn’t humane. A coop is a proper home, but ordering on-line can cost between $200 and $500. Originally, I bought a large dog house, put one of the roof sides on hinges, and installed a drawbridge ramp for the door. All-in-all, it costs about $100. Modifying something to fit your specifications always feels good.
Know how may eggs you want (and how many hens). If you get three reliable layers (who start laying at about 6 months), that’s 3 eggs a day, 21 eggs a week. Some families use this many, some don’t. Don’t over crowd your henhouse hoping for an egg boom you can't use!
Have a plan for your roosters. There are only a handful of chicks that can be reliably sexed at birth – Red Stars are one. If you don’t want these breeds, chances are you may end up with a rooster. Many city regulations don’t allow roosters. And they're almost impossible to re-home. (Thank goodness no one has asked us to take one yet…but when it happens, and I know it will, it'll be hard to say no.)

My final piece of advice – chickens live for a long time - long after they've finished laying. But rest assured, chickens have multiple uses, besides laying eggs. They’re great insect hunters in the garden. But most of all, they’re entertainment. They can be affectionate. Running around they can be funny. And they easily become members of the family.

I've long been a lover of collecting old vintage ladders.

Their clean primitive lines and versatility for decorating purposes have me craving for more!

This is where I store my favourite magazines. Love how this ladder offers some height yet still takes up very little real-estate. Hmmm... is that a FOLK magazine or two in there? Why yes it is... :)

Exhibit B is the ladder in my main bath. It is the PERFECT towel holder accessory... until those towels land on the floor of course. :) The black works well off the mirror and tile detailing as well as anchoring the room.

Moving onto my bedroom, I'm one of those unfortunate types that does not have a walk in closet. No matter, I simply flipped my entire bedroom to just BE one with the help of this little number.

I tend to not love hanging things back up in my own closet and know what? This sorta makes it ok.

Hmmm... time to implement something similar in my son's room!

Kitchen Essentials - The Basics; part 1

As a professional cook I get very specific about what tools I have in the kitchen.
The fewer the better, and they all have to have serve a function that makes cooking easier and more efficient-- none of those one purpose gadgets or extra fancy space wasters.

The picture above is a collection of my essential kitchen must haves. Nothing is all that expensive and by only having what is pictured, you will clear up space in your drawers and have an easier time cooking. Good quality tools mean they will last a long time.

The Basics: (clockwise from right to left)

Chef's knife-- Invaluable knife that every home cook should have. This is the number one tool I use and rarely share with anyone in the house. Able to perform nearly any knife task such as chopping, boning, peeling. I actually have two 8" and one 10" for various tasks. *MAC 8.5" Chef's Knife, $60
Honing Steel-- Keep those knives sharp! *Shun Sharpening Steel, $40
Bread Knife-- The only serrated knife you need. Good for not only bread but squash and shaving chocolate. *J.A. Henckels Bread Knife, $12
Wood Spoon-- I prefer wood spoons. If that's what grandma used, that's what I shall use. *Joyce Chen Bamboo Spoon, $6
Whisk-- The only tool in my kitchen that only has one specific purpose, but also a tool I would never give up. *Norpro Set of 3 Whisks, $15
Spatula-- Good for stirring and scraping. One piece silicon styles are great.
Tongs-- Invaluable to turn food, grab hot items, great when grilling. My number 2 utensil after my chef's knife. *OXO Locking Tongs, $10
Mortar and Pestle-- I use this for grinding pepper, spices, herbs, salt, making guacamole, or anything that needs to be crushed. Once you get the hang of it, it is faster than an herb grinder or pepper mill, and easier to clean. *Marble Mortar and Pestle, $15
Meat Thermometer-- Stop guessing about when cooking meat is done. Get exactly the temperature you want. *Thermometer, $5
Paring Knife-- I rarely use this knife but there are certain jobs that my chef's knife can't perform well, such as hulling strawberries. *Kyocera 4.5" Ceramic Utility Knife, $30

For those of us who enjoy gardening, these winter months can be mildly depressing. It hurts even more when the sun is shining and there’s no snow on the ground, but the temperature continues to hover just above freezing. It’s Mother Nature’s way of reminding us not to take her for granted. So we seek solace in planning and preparing for our summer blooms and fall harvests.

Seed catalogues are like party invitations to the warming months ahead; something we can read in the winter that teases of big celebrations to come. And so I order from them with aplomb, envisioning a bounty only surpassed by Demeter’s fertile fields on Mount Olympus. These are the months to get your home (and garden) in order. Already, I’ve acquired:

Moon and Stars Watermelon
Merveille des Quatre Saisons Lettuce
Lovage
Rat Tail Radishes

This list could go on and on. I’ll admit, I don’t know what half these things are. But their names are so appealing! It’s like when you buy wine just because of the label’s design. We’ve all done it, with some degree of success, and our fair share of failure. That’s all part of the fun; discovering what will grow from these tiny seed casings. If we’re lucky, we’ll be the envy of our neighbors. If we fail, no one will now because we’ll replace the plant with some basil. The garden is a forgiving space, with endless possibilities.

How I Cured My Aches and Pains

I hurt my neck the other day. I could barely move and was taking ibuprofen like crazy and smelled of Tiger Balm. All I wanted to do was lay in bed, but I couldn't because I was not able to get back up (Who knew you used your neck muscles to get out of bed?). When I did lay down, I had to roll out of bed and hope I landed on my hand and knees to get back up.

To stay busy and help manage the pain, and as a reason to cave in to recent cravings, I decided to make my favorite brownies. After stirring, baking, and then finally eating them, I certainly did feel better. I'm not sure if it was the cold packs, hot packs, or pain killers, but I'm giving all the credit to sweet tooth gratification.

Sure, my neck is still sore, but I've got some amazing brownies to help me feel better!

Fudgey Brownies
4 large eggs
2/3 c white sugar
1/3 cup honey
2/3 cup brown sugar
8 oz melted butter
1 1/4 cup cocoa powder
2 t vanilla extract
1/2 t kosher salt
1/2 cup flour
1/4 cup semi-sweet chocolate chips

*Preheat oven to 300 degrees. Line a 8"x8" baking pan with parchment paper, or grease with butter.
*In a large bowl beat eggs until frothy and lightened in color. Add white sugar, honey, and brown sugar. *Whisk until smooth. Whisk in melted butter, cocoa powder, vanilla, and salt. Mix until smooth.
*With spatula, fold in flour until just incorporated. Sprinkle chocolate chips evenly over the top.
*Pour into prepared baking pan and place in oven.
*Bake approximately 45 minutes or until a toothpick inserted in center comes out clean. Let cool for at least 1 hour before eating.

Hello, Winter...

I just knew this was coming....

Last week, I was enjoying the unseasonably rare January sunshine here in Seattle,

while snapping photos for my Issue IV 'Sweet ReTreats' column.

Since the gardenhouse out in the backyard was the setting for the photo shoot,

I was in a very 'Spring' state of mind. Even in 32 degree temps.

Then Mother Nature decided it was finally time for winter to visit the Pacific Northwest!

We've had snow for the past five days, and it has completely changed the landscape.

From a garden filled with bare branches and wilted grasses,

with flowers waiting to bloom,

it was transformed into a sparkling Winter Wonderland

wrapped in a soft white fuzzy blanket.

Since you can't argue with Mother Nature,

the tea is on and I am tucked into my office, working on some special projects.

One is an upcoming FOLKblog post with some peeks at that gardenhouse...

The little thing was pretty run down and forgotten,

so I rehabbed it and filled it with all kinds of vintage treasures!

(I'll be sharing that when Issue IV releases in March)

A Summertime Sandwich that is Perfect for Winter

It's mid-January and I am yearning for a sandwich that reminds me of days long-ago-- namely summer. Fresh vegetables and sunshine are in short supply right now in my neck of the woods so I've recreated the flavors with simple ingredients that are commonly found year round in any grocery store. The great thing about this recipe is that you can use whatever ingredients you have and like. Olives, onions, artichokes, pepperoni? Experiment and let me know what combinations you like best.

Roasted Red Pepper and Eggplant Open Face Sandwich
-1 loaf french bread
-1 cup tomato sauce (recipe follows)
-1 Italian eggplant
-salt
-1 jar roasted red peppers
-8 slices Genoa salami
-1 ball fresh mozzarella cheese, sliced into 1/4 inch rounds
-fresh oregano

Trim and peel eggplant. Slice into rounds about 1/2 inch thick. On parchment or silicon baking mat lined baking sheet, lay eggplant rounds in a single layer and sprinkle lightly with salt and drizzle with olive oil. Let sit 1 hour. This will draw out excess water and help remove any bitterness from the eggplant.
Heat oven to 400 degrees. Place eggplant in oven and roast until soft, about 15 minutes. Remove eggplant from baking sheet.

Cut bread into 3/4 inch thick slices and layer on baking sheet. Spread about 1 tablespoon tomato sauce on one side of the bread. Top with eggplant, roasted red peppers, salami, mozzarella cheese, and oregano leaves.

Bake on the middle rack for 10 minutes. Turn on broiler and broil closest to the heat for 3 minutes or until the cheese starts to bubble and brown.

Serve with a light green salad sprinkled with sherry vinegar and olive oil. Be sure to have extra tomato sauce on the side for dipping.

David's Favorite Tomato Sauce
-1 15 oz can whole tomatoes (If you can find San Marzano tomatoes imported from Italy go with those. The flavor is worth the extra dollar per can.)
-2 cloves garlic
-4 T olive oil
-heavy pinch of salt
-pinch of pepper

Add all ingredients to a blender. Puree. This recipe is great for pasta, pizza, and anything else you might need tomato sauce for. It is very light and quick to make.

Today the regional paper here in western Kentucky ran an article about FOLK and FOLKstore. Here is the full text of it below.

"Beaver Dam man getting national attention through Folk

A magazine with origins in Beaver Dam is sold in every major city in the United States.

Folk magazine creator and editor Ben Ashby released his first publication in September and has a circulation of 5,000.

Ashby said about a year ago, he went to Lexington "to get away from everyone."

"While there I hypothetically planned a magazine, never dreaming I'd get to do this," he said Wednesday morning at his shop in Beaver Dam. Folk is distributed at specialty shops and by subscription.

Folk magazine and his store of the same name are companions. The magazine has stories and ads from shops across the country. Some of the featured items in the magazine are sold at his store on Main Street in Beaver Dam and the merchandise in Folk can be ordered online. Folk is a catalog, travelogue and recipe book, with freelance writers from across the country contributing stories, photographs and recipes. He found most of the writers on blogs, and some approached him.

When Ashby conceived the idea of a magazine and store, he thought it would be a slow process, but with his skill in social networking, he put the magazine together in a few months and launched the store in about the same time.

The 22-year-old University of Kentucky senior has had help from friends and family. "My mom likes the magazine but she's not crazy about the store because of the time commitment," Ashby said. "She helps out a lot at the store."

"I think the magazine has the most potential," said is mother, Darlene Ashby, who was at Folkstore Wednesday morning.

Heath Stiltner, who writes for the magazine and is its creative director, was also at the store Wednesday.

"I have the concepts and Heath makes them work," Ben Ashby said.

Stiltner is a senior at Transylvania University in Lexington.

Folkstore opened in December and business has been good. "I was blown away," Ashby said.

He also received help from the townspeople.

"All the other businesses have been supportive. They found me this space," he said referring to the shop.

"There is a real sense of community in Beaver Dam. I thought that they might not like the competition, but I was wrong," Ashby said, adding that the general consensus among the merchants is more stores will draw more people downtown.

Ashby's major at UK is rural revitalization, which ties in with what he is doing with his new enterprises.

"I talked recently with the dean and I got 15 credit hours for the store and magazine," he said.

Ashby has the benefit of another relative who is willing to work for free.

"Ben keeps me young," said his aunt Linda Reid, who proofreads Folk. The duo also meet every Friday at daybreak for breakfast and a photo session in the woods or any interesting place they might find. Reid, a retired school teacher, also writes for the magazine.

Ashby is not only creative but thrifty. On Wednesday morning he was planning a luncheon in appreciation of the people who have been working with him. Besides creating a beautiful table with fresh flowers and items from the store, he was going to photograph the display for the spring issue of Folk.

"To say Ben is unique is an understatement," said Paul Sandefur, mayor of Beaver Dam.

Sandefur said in an e-mail that he doesn't usually call attention to a particular business because there are several unique shops in Beaver Dam, but Ashby, because of his young age and success of his magazine, deserves the attention.

Hand Crafted, Hand Craved: Annie's Goat Hill

Have you heard of Annie's Goat Hill? If you haven't, your hands (and your heart) are missing out! I have been following the Annie's Goat Hill Hand Crafted Soaps blog (www.anniesgoathill.wordpress.com) for some time now, and was elated when the first shipment of goat milk lotions arrived at the FOLK Store. Her products are not only amazing, each new blog post warms your heart!

The owner, Mary Humphrey of Hillsboro, OH, started Annie's Goat Hill as a combination of her life-long passions. She has always loved soap making and playing with fragrances. Then of course, there is the love of goats. Mary raises a herd of dairy and boer goats. The dairy aspect of farming is one of her favorites.

In my opinion, this is what makes Annie's Goat Hill products so alluring. Mary Cares. An excerpt from her blog on July 30th, 2011 reads:

"Each season the decision is made when to stop milking the goats. My business depends upon fresh goat milk, a very obvious fact.

I could purchase milk at the grocery, or in cans, or in the powdered form. But our products contain our milk, produced from our goats, milked by me. That is who we are! I know what goes into the goat’s mouth, therefore, I know what does not end up in the milk. Nothing else will do.

So, to give the “girls” (does) that are “in milk” (currently being milked) a break before they “freshen” (give birth), I make the seasonal decision to remove them from the milk stand. The decision involves looking at the calendar and the freezer contents for a count, and sometimes even a second look. I will admit, there are moments that some would consider nail-biting. Cutting the cord to fresh milk, take a deep breath!

Happily, both freezers are spilling over with frozen goat milk. We can take a rest now girls. I love you."

She loves her "girls." Simply put. "Our animals are such blessings. Taking the time to care for them, and soaking in the quiet, really does bring on some healthy reflection time."Mary milks twice a day, pasteurizes once or twice a day depending on season and volume of milk she collects, and puts the milk to good use. On her farm they drink the milk themselves, make cheese for personal use, and churn out bars and bottles of soaps and lotions that I have fallen in love with!

Mary's soaps and lotions are made in small batches. This allows her to monitor the quality of each batch and ensure all products meet her standards. Standards that you will soon learn to love; standards that are not found in your normal bottle of supermarket lotion.

Mary uses fresh, high quality ingredients. As mentioned in her blog excerpt above, her products contain her milk, produced by her goats, milked by her.

Then of course there's the kicker, Mary began Annie’s Goat Hill Handcrafted Soaps as a soap maker with no thoughts of lotion-making. After considering the thought for quite some time, she decided to attempt a simple lotion formula. From old bakeware to Christmas centrepieces

How about one last blast of Christmas before the New Year?

I was called upon to help decorate for my son's youth Christmas banquet not long ago. Nine Christmas centrepieces were needed as well as other room decor.

So I hit the thrift store to see what came to mind. And brought home a bunch of old bakeware, glass dishes and galvanized whatevers.

Luckily we had also just had a big wind storm and spotted the greens on the side of the road.

Scooped up the mirror and ironing board from the thrift too! I already had the cat. :)

Hitting the dollar store for a few candles, candy canes, fake snow and fresh produce, I was ready to play.

This is an old drain cover from 1948 that I had in my own stash. It's sitting on a pizza pan. :)

Someone at the thrift pointed out that fluted pan was from Germany.

OK then! I have here a fluted pan from Germany! And here I thought it was just pretty. :)

Fresh cranberries added a bit of extra colour.

This guy was cute but it got HOT. So beware if you try this.

These were practice runs that wouldn't have travelled well, so below is one that was actually used at the church.

I had an amazing team doing most of the work and the end result was very homespun, original and extremely price efficient. And the feedback? Nearly blew me over.

Don't overlook the old bakeware for your decorating!
Just make sure you bake first. :)

Creating a snowy mantel for Christmas

Most of us are dreaming of a white Christmas.

But when you live in the balmy west coast, it's quite by chance that snow actually materializes. So here's how I made my own winter wonderland on this year's Christmas mantel.

The easiest way to achieve snow covered evergreens is the snow spray you use for window stencils.

I sprayed it on thick and uneven, so it had a chance to build up in clumps, as if the wind blew it around.

The plastic shredded snow offers realistic thickness.

And the amazing haze to the right is glass angel hair, extremely difficult to find nowadays.

I generally find my stash at thrift stores.

Some trial and error was practiced with flour, baking soda and baking powder.

And here's the result.

After I had the greens positioned, I placed newspaper behind the branches and sprayed.

The snow really made an impact working with a darker fireplace.

Today I was at a friends store.. and I spotted these wonderful little critters... Conveniently a friend of his had left them for me to bring to our store instead of his. I think they are absolutely cute.... and perfect in FOLK store. Human existence can be explained by stating that it is madeup of one part communication and one part community. Humans require severalbasic needs but it is most apparent that, besides the necessary food and water,a human needs to have a sense of belonging to a community and to be able tocommunicate with that community. Throughout the history of the modern world, countless societies haveformed and toppled, all developing their own way of life and form of communication.With each century, even every year, we invent a new way of communication.

From written and spoken language we created books. Fromwriting and speaking we created telegraphs, and in turn the American PonyExpress delivery service. Each generation craves a deeper knowledge of theirsurroundings and the news of the world, and it is the job of computerdevelopers worldwide to deliver these new and easier means of communication tothe world.

The last 20 years alone have seen the development ofcellular telephones from bulky bricks to slim slivers. Not only can you callinternationally from a telephone now, but you also use them to text, email, orleave a voicemail for a friend. The commercialization of the Internet in the1990s also gave way to a new age of cyber-communication in the 21^stcentury.

Social media as we know it has changed form with theintroduction of the internet and can now be used to spread the word oforganizations and personalities worldwide. The Internet introduced the publicto social media outlets like Facebook, Myspace, YouTube, etc. The ease ofaccess to the internet has revolutionized the way that society, especiallycommercialism, now represents and distributes itself. The rise in the use ofthe internet to about 1/3 of the Earth’s population now having access to someform of the network has made companies change the way that they think aboutadvertising.

FOLK Magazine was started with small business and small-town America at the forefront of our minds. FOLK is not just a magazine to us, but it's our way of life and our way of sharing our lives and lives of others with our readers. One of the principal components of that life is an involvement and commitment to small business and artisanal goods. After years of working with small businesses I felt it was my duty to build a new platform for these business owners to exhibit their products and their work as something bigger and more involved than big box mercantilism. I wanted the businesses to be able to compete with big business again. Just showing the businesses wasn't enough for FOLK and our staff, though. We wanted something different and more involved.

This was the start of FOLK Label, our non-profit organization. FOLK Label is a non-profit organization designed to promote, advertise, and sell the products of those American artisans that we talk about in our magazine. It wasn't enough to give them a few pages in a magazine, but properly getting their names out to the public through social media could really help and give growth to these small businesses. Through Facebook, Twitter, Blogger, Tumblr, Pinterest, YouTube, and the like we have designed a campaign that publicizes the heart of America's last heritage businesses.

Facebook was the first and immediate way that FOLK Label was promoted. With a user number of nearing 800 million, Facebook is the most widely used social media site currently. It makes it the obvious choice to promote any kind of event or organization for a quick response. For FOLK Label we used our FOLK Magazine Facebook page to advertise the businesses and business owners throughout the second half of 2011 and also displayed their products in our photography. We posted several posts about these businesses as a way of introducing the numerous Facebook fans that we currently have to quality American goods.

Throughout the holiday season we also promoted the businesses that we work with, such as Woodland Primitives, as potential gift ideas. The posts promote businesses, their owners, and their products. This allows those 800 million viewers to view the small Ohio business and the quality handmade primitive products made by Carol Woodard. This campaign was utilized to also promote the products designed by our FOLK Label artisans that we carried in our FOLK Store in Beaver Dam, KY. Using Facebook also allowed us to advertise special holiday events for the sell of these products in store through Facebook's Events option.

Twitter and Tumblr were utilized in much the same way as Facebook, though Twitter's 140 characters rule made summarizing our promotions interesting. Twitter and Tumblr were outlets to get those users that may not have Facebook into the promotion of FOLK Label.

Pinterest is a new addition to our social media outfit. It is used as a collection of "pins" that show the inspiration of the user in a very organized and visual way. Using interest we "pin" pictures of our artists creations and allow the Pinterest community to see the products made by our artisans to inspire the public and to advertise our non-profit businesses.

Youtube has been implemented in our FOLK business in recent months when we have updates for our readers on YouTube, Blogger, Twitter, and Facebook. Using YouTube my staff and I post updates for FOLK readers with important deadlines, but also with information that we think they may find interesting. We have talked about FOLK Label numerous times on YouTube, and subsequently posted it to our other social media sites, and have showcased our artisans in the videos. We use products from our artists in our videos when we are advertising the businesses and when we are promoting the non-profit organization itself.

Our final major social media resource has been Blogger. Blogger has a huge viewing audience not counting its immense user-base. Using Blogger we are able to link our FOLK Magazine blog to those of our artists and businesses in the FOLK Label. We are also able to blog about upcoming events, products, stores, and artists that revolve around the FOLK Label.

Social media is an industry with continuing growth, and it is an industry that will always have relevance in our society. Our society has become so media-centric that we've discovered thousands of ways to make sure that we know every detail of any current event immediately. Social media through internet use is the brick-and-mortar of that business, the foundation. Without Facebook or Twitter how would we know that Chase is "finally getting his phone back today"? Or more importantly how would we know that Southern Proper has teamed up with Red Clay Soul to give back this Christmas season? If it is as simple as clicking an icon to get these kind of updates, why can't these kinds of exposure bring back small business America? It has proven useful for FOLK Magazine, and even for FOLK Label. This is why I chose not only to pick a non-profit for use in this paper, but to invent a real tangible cause that I was driven to support. One that I can advertise and promote to help the nation I love, and the people who keep it's heritage, history, and market alive one quilt stitch at a time?

There's a stepladder on my Christmas tree!

One of my all time passions is creating new ways to do things with 'normal' components.

And my tree got hit this season. :)

You kind of have to do a double take, but there's a stepladder buried in this picture. Here, let me prove it.

After the fiasco of landing two bad real trees last year and them both dying within a week, I decided to end the grief and bring out the faux this year. And do something original to remove my faux boredom that was setting in. :)

I will say it was not easy to get that tree inside that ladder! I removed the top so it would fit, then attempted to push this spring loaded puffball into a skinny ladder frame alongside the grunting help from my son.

The decorations were what some may deem a little out of the ordinary as well. :)

Plumb line. Gotta love that shape!

Garland was rope, torn sheets and ribbon, tied in knots in order to join for longer lengths.
Rather than fuss and hide the obvious, I chose to celebrate it.

As for the base, I placed a firewood filled sled in lieu of a traditional tree skirt to chime in moreso with that outdoor feel.

The snow is flour. All my snow tricks are HERE.

I know. It's brave and even maybe (not maybe) a little crazy.

But this kinda risk is just fun to take for the likes of a junk lover like me. :)

FOLK store: What On Earth Do We Carry?

Hey everyone. So you may be wondering... what on earth does FOLK store carry... well to you I say... it is a long answer. We are basically an old fashion dry-goods store. That means we carry groceries, gifts, bath and body products, and an array of other things. I thought for tonight's post I would share a few of my favorite products. Keep in mind that our stock changes weekly.

Currently we are carrying the following.... but we also have oh-so-much more in the store.

~Fresh Flowers: Each week we receive a shipment of flowers directly from greenhouses in Canada. The selection changes weekly. This week we will be featuring red roses for $16.00 per dozen.

~Fresh Chocolates: Our chocolate counter changes every two weeks. Our chocolates are handmade in Louisville, Kentucky by Cellar Door Chocolates. We sell them by the piece. This week we have turtles for $3.00 each, bourbon balls, truffles, and peanut butter cups for 90 cents each, and an assortment of barks, brittle, and fudge.

~Fresh Cupcakes: A lady just up from us on Main Street makes a variety of cupcakes for us each week. They are $3.00 each.

~Moss Hill Products: We carry lip balms, candles, soaps, and gift sets from the Louisville based bath and body company.

~Whimsy and Spice Products: Fresh from New York City we have espresso brownies and various cookies ready for you to take home.

~Artisan Food Goods: We are pleased to work with many Kentucky Proud brands to have a wide selection of products that were made in the bluegrass. Products range from flours, grits, mixes, soups, cobbler fillings, bottled drinks, jams, preserves, and jellies all the way to cheeses and fruit cakes.

~Candy Counter: Remember the olden days as you select from our favorite candies from the by-gone days.

~Children's Cabinet: On the note of remembering the olden days we have a cabinet filled with children's books and games from the past.

~Orchard House Carrot Cake Jam: After visiting the wonderful bed and breakfast in Granville, Ohio I left with an arm full of their fabulous carrot cake jam.

~The Caramel Jar Caramels: These caramels were one of my favorite things in Issue I. Now you can try them for yourself.

~Vintage Home Accessories. We have a few hand picked vintage accessories that would look great in any home.

~Antique Furniture: Many of our store fixtures are also for sale! Check out our collection of pie safes, step back cabinets, and tables.

~Hand-Built Harvest Tables: These amazing 6' tables were built of reclaimed wood. They are also at an amazing price!

~Handmade Folk Art: Yes, we have it! A whole corner of the store is dedicated to the primitives that so many of you love. Check out this section quickly. These pieces go fast!

~Handmade Soaps: Urban Farm Naturals and Millstone Mercantile have made several scents of soaps for us. Each bar is handmade and perfect for any soap lover. They are $4.00 per bar.

That's what it's all about...

Because nothing says "Christmas" like a few calories...

Peanut Brittle
2 c. sugar
1 c. corn syrup
1/4 c. water
1/2 c. salt
2 c. raw peanuts (it's important to use raw!)
1 tsp. vanilla
t tbsp. butter
1 tsp. baking soda

Mix together sugar, corn syrup, and water and cook over medium heat. Bring to 250 degrees (MUST use candy thermometer...or, your brittle will be as successful as my homemade marshmallows; "that looks about right" does not cut it:)). Add raw peanuts, vanilla and butter. Bring to 300 degrees. Remove from heat and add soda. Mixture will foam up. Pour quickly into a greased sheet pan. Cool and break up.

Hokey Pokey
Here's an interesting twist on the holiday brittle tradition. I picked up this recipe at my library's candy/cookie swap last week. Heather Hannan, owner of Annie Ruby's Cafe in Burkesville, KY, shared this little treat that she first learned about while living in the Grand Caymans. This British candy has an interesting flavor, one that might be considered an acquired taste by those accustomed to the standard dense and rich desserts often made around the holidays. Trust me though, if you're like me and enjoy roasted/almost burnt marshmallows, you will love this. It can also be coated in chocolate, sprinkled over ice cream, or dipped in coffee.

1/2 c. caster or fine sugar
4 tbsp. golden syrup or dark corn syrup
1 1/2 tsp. baking soda

Put sugar and syrup into a saucepan and stir together to mix. You should NOT stir once the pan is on the heat. Place pan on medium to high heat and let mixture melt, then turn to "goo." It will then turn into a bubbling mass the color of maple syrup (Sounds good, huh? Stay with me, I promise:)). This will take three minutes or so. Remove from heat and whisk in the baking soda. Turn immediately onto a piece of baking parchment or greased foil. Leave until set and then break into pieces.

Welcome to Beaver Dam, Kentucky

As you may know FOLK is based in Beaver Dam, Kentucky. The magazine is produced in Lexington, but the mailing, banking, and business all takes place in the small western Kentucky community. This is also where the FOLK store is labeled. You may be asking where the heck is Beaver Dam. The town is located in the dead middle of western Kentucky. It is between the mid-sized towns of Owensboro and Bowling Green. 1.5 hours away from Evansville Indiana, Nashville Tennessee, and Louisville. It is two hours from Lexington. We have a population of 3,500. The area is largely ag based and small communities pop up along the rural highways. The FOLK store is located in the small downtown of Beaver Dam. A hand-full of buildings line Main Street. Along with FOLK the downtown has several antique stores that are filled with finds at very affordable prices. If you plan to visit the FOLK store you must also visit these antique stores.. along with our other fine shops in town. I thought today would be a good day to share some of my favorite photos from Beaver Dam and the surrounding area.

Issue III Finally Has a Cover!

I figured rather than focusing on the snow and cold of winter it would be a nice treat to focus on the beautiful landscape and people of our nation.

FOLK store: Open For Business

The FOLK store has officially opened for business in Beaver Dam, Kentucky. We celebrated our opening Friday evening. It was an extra special night as the downtown of Beaver Dam came alive to celebrate the Christmas season. All of the downtown stores were open and the city's Christmas tree was lit.

At the store Liza, Heath, Linda, Sandy, and I celebrated our opening by serving cakes from the first issue and welcoming everyone into the store... Boy what a night we had. We couldn't believe the response we received. It was a very successful weekend.

I will be doing posts throughout the week about FOLK store. I want to start tonight by sharing just a few photos.

My grandma likes "stuff."

Amongst actual antiques, none of us are ever surprised to find giant, furry rabbits, baskets of seashells, Rhett Butler-inspired postcards, pictures of grandkids with significant others who have not in fact been significant others since 1993, Reynolds wrap – not encasing something, just the wrap itself, Christmas garland, or cutlery just nonchalantly hanging out as if there is no other place for it to logically be.

This past Christmas, I sat down on the red leather couch in the living room and quickly realized that I had crushed something, possibly the pickle that would be hid in the tree later in the evening (and that my sister Leigh would inevitably win $20 for finding…don't ask) or a small child. A typical segue way here might be “But to my surprise,” however, nothing could be farther from the truth; making complete sense, I stood up and realized that I had sat on a knife handle. A steak knife, not a butter knife. With furrowed brow, a result of curiosity as to what she had been doing with it, not with the fact that a potentially deadly weapon was in the couch, I took it into the kitchen. Grandma, with the laugh that it unmistakably Lois Nunn’s, grinned and said, “Well, there’s my potato peeler."

This is the kind of stuff that makes Grandma’s so incredibly fun though. One literally NEVER knows what is going to happen, what someone is going to say, or what funny little trinkets will be stumbled upon by overstimulated eyes. Furthermore, all the “stuff” that is so worthy of conversation, good-natured eye rolls, and “collective stare, silence, ‘huh’” is matched only by the absolutely gorgeous assortment of roses so meticulously maintained outside the house and by the laughter and love inside this relatively small brick abode. It just wouldn’t be “Grandmas” if order and time management abounded.

Now resting in the pale pink fabric-covered antique chair that Grandma and Granddaddy have owned since they got married (57 years ago): a navy throw pillow with the unarguably wise mantra, "I'm not bossy, I just have better ideas."

Made in America Matters

For those of you who follow our Facebook page, I am sure you have probably seen my pledge to gift an entirely Made in America Christmas this holiday season. I have always found it important to buy American Made, but I will admit that during my gifting, in years past, I have fallen vulnerable to the puppy dog eyes of my adorable baby cousins who want nothing more than the most popular toy of the season.

As much as I loved being the "cool" cousin (because I was the only one crazy enough to stand in line at 2 am for a pink electronic hamster), I decided this year that I should gift the way I live. I don't make very many foreign purchases for myself, so why should I for anyone else?

I began with Facebook. You see, I have a bit of an accountability problem with myself. If someone else is not counting on me to do something... I tend to let myself out of it. That's why I turned to you, my dear FOLK family. I made my pledge on Facebook as a method of accountability for myself. If I pledged to each of you that I would buy only American Made gifts this season, I knew I would make myself do it. I would make myself do it, even when those big blue eyes begged for a hot pink plastic hermit crab and a doll with plastic bendable hair.

Next, I outlined exactly who I had to buy for and the type of gifts I would need to purchase. I am sure my list is very similar to your own, my friends and family are your normal bunch. I needed jewelry, scarves, hand bags, & toys. I had to satisfy an avid baker, a farmer, and my boyfriend... who is currently getting his PGA certification and might possibly be the biggest fan of the game of golf you have ever met! Then of course there are the stocking stuffers. I needed a lot of small, random items for those. I had my list and I was set! The one thing I didn't realize from the start is how FUN gifting made in America items was going to be.

There are a ton of small businesses across the country who have wonderful gift options, several in my hometown. The Art of Being Thankful

The Thanksgiving holiday tends to make us slow down and think about what exactly it is that we're thankful for. I am left to wonder however, why #I'mThankfulFor hashtags on twitter and countdowns of things we're thankful for on facebook only emerge in November.

I urge you this Thanksgiving holiday to pick up the thanks and not let it go. Carry the idea behind Thanksgiving into the new year and practice being thankful throughout the year.

Believe it or not, there truly is an art to being appreciative; an Art to saying Thank You. Those two words we utter so carelessly have actual meaning. Take time this season to embrace that, to embrace gratitude. When you say "Thank You," do you really mean it?

Slow down and take the time to absorb your feelings and emotions. The true meaning and benefits of the phrase are too often lost in the over rehearsed, no eye contact, common mumble.

Luckily, the art of saying thank you is easy to master. The art of saying thank you simply relies on the idea of being true to your words. Mean what you say, and say what you mean. Practice your appreciation by incorporating the following tips into your everyday life.

o Be direct. When someone does something that you appreciate, vocalize your thoughts. Not only will you express your gratitude for their thoughtfulness, but I guarantee you will make their day brighter.

o Be sincere. Cherish the time you are given with those you care about. Turn off the screen you so often find yourself glued to, and focus on making eye contact. (I love taking the time to determine exactly which shade of blue my boyfriend's eyes are on any given day. They tend to vary from a Clear Caribbean to a Denim Sapphire; each revealing a different mood.) As Liza often mentions, when you begin to notice the little things you appreciate the big things even more.

o Be personable. You will form stronger relationships if you speak directly to someone instead of at them. Incorporate their name. Everyone loves to be recognized by name for doing something good.

o Be aware. Look for opportunities to give thanks. Strive to show your appreciation multiple times throughout each day. When you are focused on living a thankful way of life, it becomes more than a word.

o Be specific. Instead of quickly mumbling a casual "thanks," acknowledge what you are truly thankful for. (Example: Thank You FOLK readers for your support and patience of our launch.)

o Be punctual. Don't miss the moment, acknowledge your appreciation when it occurs. If you are not able to say thank you in person, say it by pen. Thank you notes should always be mailed within two weeks of the time of thanks.

When you are direct, sincere, personable, aware, specific, and punctual those two simple words mean a lot more. Gratitude is not worth anything when you don't express it.

Step away from mass communication, and pick up a pen. It is ALWAYS appropriate to send a hand written Thank You note. Thankfulness shown by a text, email, or phone call is great but nothing compares to a thoughtful, handwritten note. When you can't say it in person, say it in pen.

How to write a Thank You note:

1. Begin by selecting stationary that suits you and your personality. It should be a simple design. The purpose of the stationary is solely to serve as a means of transportation for your penmanship; a stationary that is too busy will distract from the sincerity of the message.

2. Practice your penmanship. Cursive is not required, but neatness is a must! Take your time and concentrate on making your message legible. If you feel the need, practice writing on a scrap sheet of paper first.

3. Be thoughtful and all inclusive. Focus on putting meaning behind your words and elaborate on what exactly you are thankful for.

4. Sign the bottom, address the envelope, and place your thank you note in the mail.

Hey everyone! I am sure you have noticed from my weekly youtube updates I shoot them in my bedroom at my computer. I have had lots of comments about the ever changing background... so I thought I'd give a quick tour of my space. Here in Lexington I live with my roommate Mason... yay college life. We have an apartment in an apartment complex just outside of our downtown and near campus. I originally did these photos to go in the Christmas issue... but we ran out of room.

Christmas ornaments ready to hang on the tree sit on my desk beside a vintage clock. I love these old fashioned clocks.

My Hunter boots are always close at hand. The white cabinet holds the magazines I use for reference.

The headboard is covered in one of the throws from the Christmas issue cover. A Woolrich throw adds color.

Some of my favorite books and a few recent magazines sit a top a vintage bench.

This tree was used in the Blue Claw piece in the fashion section. It has since been planted in my backyard at home.

My favorite bag is filled with my stuff and flowers used in several shoots sit atop a table built from twigs.

The computer has since been replaced with a Mac. I am finding that I am really loving these snow covered trees this year.

Sisterhood of the Traveling Purse

Do you have a particular item of clothing or a favorite accessory that has stories to tell?

This is my best friend, Caroline, a Chicago native and vintage store extraordinaire who happens to be holding that one Turner/Kraft story-collecting piece. We picked this up during my last visit in September (a beautiful time to visit Chicago by the way). We both loved it, opted to make a joint purchase, and have decided to share it. I will keep it for a few months, documenting the trips it takes, the events it attends, and the people it meets. I will then mail it to her, with said synopsis in tow, and she will do the same.

It is our garden gnome. We are Blake Lively and Alexis Bledel.

Oh, the funny, interesting, and maybe even infamous stories I hope this little beaded purse will have to tell.

Fall Beef Stew

I love Autumn. I love going to my local orchard and picking the last of the apples and grabbing a few squash. The gold and fiery leaves stir up a hunger for hearty dishes, leaving me ready to get into the kitchen whenever I can.

One of my fall and winter staples is a simple beef stew. Slow cooked meats and vegetables with a rich broth cannot be beat. This stew is best served with a light sprinkle of sharp cheddar cheese and lots crusty bread on the side.

Ingredients:

2 T vegetable oil
1# boneless top round steak, cut into 3/4 inch cubes
4 ounces mushrooms, quartered
1 medium yellow onion, medium dice
2 stalks celery, medium dice
2 small carrots, peeled and sliced into coins
1 parsnip, peeled and sliced into coins
2 cloves garlic, thinly sliced
1 cup dry red wine
1 quart vegetable stock
2 bay leaves
1 sprig thyme
4 fresh sage leaves, chopped
1 sprig rosemary, or 1/4 teaspoon ground dried rosemary
1# small red-skinned, yukon gold, or purple potatoes. I used a mix of all three
1/2 teaspoon salt
1/2 teaspoon pepper

How to:

In a heavy dutch oven or pot, turn heat to medium and add oil. When hot, add beef cubes. Stir to coat with oil and let cook for about 10 minutes, then stir. Let cook 5 more minutes until the beef is nicely browned and dark bits begin to stick to the bottom of the pot. This is called fond, and is packed with flavor. If your beef released a lot of liquid you may need to cook longer to allow to evaporate.

Add mushrooms, stir and let cook 5 minutes. Add onion, celery, carrots, parsnip, and garlic.

Quickly pour in wine and stir. While stirring, be sure to scrape the bottom and sides of the pot to release all of the fond into the wine. Bring to a boil and allow the wine to reduce for approximately 4 minutes.

Add stock, bay, thyme, sage, rosemary, salt and pepper. Bring to a boil and turn heat down so the liquid simmers. Cover with lid and cook for 1 hour.

After an hour, add potatoes and stir. Add more stock or water if necessary to just cover. Cook at a simmer for 30 minutes, or until potatoes are fork tender, but not falling apart. Remove bay, thyme, and rosemary sprigs.

Adjust salt and pepper and serve in warmed bowls. Top with grated sharp cheddar and crusty bread on the side.

I hope you try this easy stew out this fall and let me know how you like it. On cold, cloudy days, this is one of my go-to meals.

Thank you to all who have offered support over today's flag discussion on facebook. I think it is very refreshing that a group of young people have embraced the American lifestyle that brought us to the point we are as a nation. There will always be people who will be offended by one thing or another, BUT this is a magazine that promotes "truth, justice and the American way" just as much as Superman did in my childhood. Mistakes will be made, but it's the learning from those mistakes that make them more valid. In America, we are allowed the freedom to make mistakes. We have the freedom to speak and make mistakes, to publish and make mistakes and the freedom to live in spite of said mistakes.

Stay the course, FOLK magazine. You are telling the story of the American spirit. You are promoting the small business world that brought us to the top of the industrialized world. You are expressing freedom in such a beautiful, refreshing way. Apologize if you feel you must, then let it go.

Can you imagine how much more awesome The United States of America would be if we had more FOLKs out there like you guys and gals? WOW!! - Linda B.R.

I love it when I accidentally stumble across something that makes me so happy. Now, I will state up front, I am neither picky, nor snobby, when it comes to food. I love Diet Dr. Pepper (my "water cancels out DDP" philosophy will likely show its shameful face in "The Little Things" at some point) and oatmeal pies from any of the assorted local gas stations just as much as a glass of red wine and some beautiful dish at an urban downtown, hipster restaurant. With that being said, however, I honestly think that I, along with a dear friend of mine, found a gem in south central Kentucky.

Little Debbies just weren't calling our names on this particular morning. We needed fried potatoes, pancakes, bacon, eggs (and real eggs, not the stuff poured from a cardboard container). As fans of piddling (in fact, my blog has an entire section dedicated to "The Art of Piddling"), we decided to just explore until we found something that looked inviting. Leaving from Bowling Green, we made our way north on 31E (that's right, I said "north" on 31"E") and ended up in Cave City, Kentucky. Steering clear of the interstate area of Cave City, we ventured to what I am assuming is the downtown. We passed a local fruit and vegetable stand, stopped in Chaser's Kentucky Chocolates (if you're feeling spunky, try the bourbon balls), and then turned left onto Broadway (I've decided there's usually neat stuff on most streets named Broadway). Across from the post office, we noticed a red awning that covered two bay windows, both of which had in crisp and classy white letters "Cream and Sugar Cafe." Yep, this was it.

You know how sometimes you can just walk into a place and know you'll like it? That it just has a sense of "home" about it? This was my experience at Cream and Sugar. The hardwood floors, exposed brick, cheerful, yet muted yellow walls, and the alluring smell of maple syrup made a great first impression. Impeccably clean and tastefully decorated (some local artwork, but not overly busy; a small bookshelf with reads like French Women Don't Get Fat and various travel books; a bulletin board with community events), this cafe simply looks like a place I would like to own.

We sat along the exposed brick-wall side, one in the booth part, the other in the chair (there is a nice mix of booths, table/chair, booth/chair combinations - none of which are too crowded or close to one another) and anxiously awaited the menus that were being rather slowly, but not lazily, strolled our way. An older gentleman approached the table with both the anticipated menus and a fresh pot of coffee in hand. His first words set a precedent that we have since come to look forward to: "Welcome to Cream and Sugar, where the food's alright and the staff's a bit grumpy." We had his number, though. Contrarian he tried to be, yet a gentle spirit and a playfulness oozed through his Jack Lemmon facade. He said little else that particular meeting, but when he did, oh what a treat. (I am inclined to share the jokes he walked over and whispered and then gingerly walked away as though he had just topped off our coffee, but perhaps they are better saved for another time). In subsequent visits, we discovered that we had in fact been served by "Grumpy Denny Doyle" (or something along those lines), a local Cave City resident who comes in from 6:30-7:30 (before the wait staff can get there) and just volunteers. I have a feeling that this is one of the many interesting characters that enliven Cream and Sugar Cafe.

But, anyway, the food (and for those of you who don't HATE texting acronyms as much as I, please put an "OMG" after that). The menu is fairly simple; you won't be able to order a vegetarian frittata or smoked salmon eggs benedict. The choices are nonetheless aplenty: bacon, sausage, city or country ham, biscuits/toasts, eggs cooked to order, make-your-own-omelets, waffles (well, in theory, they haven't had waffles during subsequent visits either), french toast, and pancakes. Breakfast is probably my favorite meal of the day, and let me tell you, this is truly one of the best breakfast places I have ever patroned. The bacon is always perfectly crisp, the pancakes are huge (please, go with two, not the 3 stack) and fluffy and utterly irresistible, the eggs are "real" eggs, the potatoes are fried like my dad used to do on Christmas morning, and the homemade blueberry muffins look like they should be on the cover of FOLK Magazine:) (the only thing I would not recommend is the gravy; it isn't sausage gravy and thus does not have enough grease and fat content for my liking). Furthermore, the coffee is freshly brewed, each individual gets their own syrup container (for some reason, this made me so happy), and the prices are incredibly reasonable (two people can get out of there - and utterly stuffed - for under $15).

If you're in the area between 6:30 and 2:00, you should definitely stop in. Trust me, you will leave a little heavier, but a whole lot happier.

For the Record

Ever look at that stack of old records and wonder just what the heck you are keeping them around for?

Away went the record player and in came CD's. Then, the CD player left and now you have a digital music player that contains all your music. Don't fret, and definitely do not throw those LP's in the trash because you can make some great lights. What better way to add some light to your house and hold on to those distant memories?

Materials needed:

1 LP record
glass or metal bowl, smaller than record
1.5 inch drill bit
1 hardwired or swag-type paper lantern light kit (can be found inexpensively at World Market)
1 standard base CFL light bulb (I like the candelabra style with this light)
*DO NOT use incandescent blub. The heat will damage the record.

How To:

Remove top rack from oven and lower the second rack to the lowest position. Preheat oven to 400 degrees F. Turn bowl upside down and place record on the bowl and place in oven for 30-40 seconds.

The record will begin to bend and melt around the bowl after a very short while. (Please don't mind the messy oven, I've been making lots of bread lately.) With oven mitts on, remove the bowl and record from the oven. Place on a heat safe surface and form the record to the outside of the bowl. Let cool, allowing the record to harden.

Invert the bowl and place the record inside. Return to oven for another 30-40 seconds. When it looks like the record is soft again, press on the center (still using oven mitts) pushing the record into the bowl. This will form it to the inside size. Remove from oven and let cool for about 30 seconds. Remove from bowl and let cool completely.

Using the 1.5 inch drill bit and an electric screwdriver or drill press, drill a hole through the center of the record.

Install the light kit to the record using manufacturer's instructions. This only consists of unscrewing a large plastic nut, inserting the light through the record's hole, and re-screwing the nut. Very simple.

Install hardwired kit, or hang plug-in swag and screw in light bulb. Turn on the light and show off your handy work.
